#TikTok Live Recipe: Keto Ice Cream









 Keto Ice Cream

Ingredients 
6 Eggs
1 Cup Sweetener *
2 cups Cream 
1 cup Almond Milk
1 tsp Vanilla**

Directions
  • In a mixing bowl crack the eggs, and  whisk thoroughly at high speed.
  • Add Vanilla and cream, whisk
  • Add Almond milk, whisk.
  • Pour into frozen ice cream maker bowl, insert paddle, turn on machine.
  • Wait 30 minutes then... YUM!
  • Add toppings to your hearts's desire!
 
* Note : If not Keto, then use sugar. Optional:  If using an Erythritol blend,add 1 TBS vodka, which helps in the freezing process and partially eliminates crystallization.   Whatever sweetener you use put in the equivalent sweetness to sugar. For example, allulose would be 1 1/3 cups, where as monkfruit/erythritol blend (Lakanto) would be 1 Cup.

** You can also add 1/2 Tsp (or to taste) of other flavorings: e.g. lemon extract, maple extract, coconut.
Also, You can add other ingredients such as chocolate chips, berries, or nuts during the last five minutes of freezing the ice cream.

#TikTok Live Recipe: Ranch Dressing - Corn-free, Sugar-free, Wheat-free

 Ranch Dressing 
Corn-free, Sugar-free, Wheat-free

Ingredients:
1/4 Cup Black Pepper 
1 1/2 Cup Parsley Flakes 
2 Tbsp Kosher Salt 
3/4 Cup Granulated Garlic 
3/4 Cup Granulated Onion 
1/4 Cup Dill Weed 

Directions:
Combine all ingredients, store in an airtight container. Makes about 3 ½ cups of dry mix

To Make Dressing, whisk together 
2 Tbsp of mix (or to taste, I use more)
1 cup Mayonnaise 
1 cup Buttermilk
1 cup Sour cream
Optional: 1 tsp Lemon juice

Refrigerate for 2 hours. Makes shy of 1 quart.

#TikTok Live Recipe: Pumpkin Cake #Grain-Free #Ketofriendly

 Low Carb Pumpkin Bread


Bake: 350° , 60 to 70 minutes

Ingredients:
3 cups blanched almond flour
1/2 tsp  salt
1 tsp baking soda
2 TBS Pumpkin Pie Spice
1/4 cup butter or Coconut Oil
1 cup Sweetener of choice (Equivalent of 1 cup sugar)
6 large eggs
2 cups fresh OR canned pumpkin (or squash, roasted and pureed)
1/2 cup Chopped Pecans

Instructions:
  • Preheat oven and prepare 9x13 pan. (I use parchment paper--or you can grease and flour the pan.) 
  • In a mixing bowl combine almond flour, baking soda, salt, and spices. 
  • Mix butter, sweetener, eggs and pumpkin until smooth. 
  • Stir wet ingredients into dry. 
  • Pour into pan. Sprinkle batter with nuts.
  • Bake 55-65 minutes.

Liam of Early Midlife Crisis Interviews The Hurricane!

 I've had quite a run on TikTok this year--I went from 200 followers to over 1,000 followers in a week, and the last time I looked, I had 33.4k!  People have been really wonderful and open to hearing about my journey with neurofibromatosis type 1.  It has been a joy to "meet" them on my TikTok live shows.

You never know how NF will manifest itself,
but we do know that it affects everyone differently,
and that most of the more serious issues are hidden.


One of the people who has touched my life is Liam Hamer, who reached out and asked me to be on his podcast, Early Midlife Crisis, recorded on Spotify.  Thanks so much Liam!

#TikTok Live Recipe: Pigs-in-a-Blanket from High Falutin' Low Carb

Pigs-In-A-Blanket

1/2 cup coconut flour (60 grams)
2 tsp baking powder
1 tsp xanthan gum
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp Italian seasoning
2 1/2 cups mozzarella cheese shredded (250 grams)
2 oz. cream cheese (55 grams)
3 large eggs, beaten
2 Tablespoons melted butter
12 bun length hotdogs or smoked sausages
1 beaten egg for egg wash

1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. Sift together coconut flour, baking powder, xanthan gum and spices in a small bowl and set aside.
3. Melt mozzarella cheese and cream cheese in microwave on high power for one minute. Stir. Place back in microwave on high for another minute. Stir.
4. Using damp hands or dough hooks, mix in beaten eggs, butter, and coconut flour mixture until a dough is formed. Dough should be a bit wet and sticky.
5. Place a piece of parchment paper on countertop and turn out dough. Place another piece of parchment on top and roll into a thin rectangle.
6. Using a knife or pizza cutter, slice the dough into 12 thin strips. Wrap each hot dog with a dough strip and place on parchment-lined baking sheet. 
7. Use a pastry brush to brush the rolled hot dogs with the beaten egg.
8. Bake at 400°F for about 18-22 minutes or until lightly browned. Let cool and enjoy!

#TikTok Live Recipe: Chocolate Chip Cookies #KitchenAid

Chocolate Chip Cookies
Kitchen-Aid Cookbook




Oven: 375°, 10-12 minutes

1 cup sugar
1 cup packed brown sugar
1 cup butter, softened
2 eggs
1 1/2 tsp vanilla
1 tsp baking soda
1 tsp salt
3 cups flour
12 oz semi-sweet chocolate chips

Cream sugars, butter, eggs, and vanilla thoroughly.
Add dry ingredients and mix well.
Fold in chocolate chips (and nuts, if you want).
Line cookie sheet with parchment paper.
Drop rounded teaspoon of dough onto parchment paper and flatten a bit.  Have 2" of space between cookies.
Bake at 375° for 10-12 minutes, cool cookies on wire rack.

TikTok Live Recipe: #Keto Chocolate Chip Cookies

 




Oven: 350F

1/2 cup butter, melted
1/2 cup Swerve Confectioner’s sweetener (we used generic monk fruit blend)
1/4 cup Pyure Organic Bakeable blend sweetener (we used allulose)
2 large eggs, whisked
1 tsp vanilla extract
1 1/4 cups almond flour
1/4 cup coconut flour
2 tsp baking powder
1/2 tsp xanthan gum
1/2 tsp pink Himalayan salt
1 1/2 cups Lily’s stevia-sweetened dark chocolate chips (one 9 oz bag)
Note: We use two different sweeteners so that you won’t taste any bitterness or oversweetness from just using one.

* In a large bowl, whisk together the melted butter, Swerve Confectioners Blend and Pyure Keto sweeteners, eggs and vanilla until fully combined.

* In a separate bowl, mix together the flours, baking powder, xanthan gum, and salt until combined.

* Add the dry ingredients to the wet ingredients and mix until it’s fully incorporated.

* Using a spatula,  gently fold  Lily’s chocolate chips into the cookie dough until it’s evenly combined.

* Using your hands, roll about a 1-inch ball of cookie dough and place it on a baking sheet that has been lined with parchment paper or a silicone mat.

* Slightly flatten each cookie to form the shape of your cookies.  These cookies will not spread much when baked.

* Bake in the preheated oven for 12 to 14 minutes, until golden brown.

* Allow the cookies to cool for about 5 minutes before transferring them to a wire rack to cool completely.
